4 Healthy Breakfast Ideas

My sister Jana and I have been brainstorming breakfast options that are both easy and delicious, but also gut healthy and energy boosting. I know, that’s a tall order! We hope these options will give you some go-tos for your weekly routine! A few are paleo and whole30 friendly as well.

 

Paleo Banana Bread
4 eggs
3 medium overly ripe bananas, mashed
1/4 c. honey
1/4 c. coconut milk or cream
1 tsp vanilla extract
2 tsp baking soda
2 1/4 c. almond flour
1/2 tsp cinnamon
1 scoop Ancient Nutrition pure bone broth protein powder (optional)

Mix eggs, bananas, honey, coconut milk and vanilla in a bowl until well blended, then mix all remaining ingredients in a separate bowl. Combine the two mixtures, and pour into a greased bread pan. Bake at 350 for 35-50 minutes, best enjoyed warm with a drizzle of honey or slap of kerrygold butter (or both!).

I usually put these together while I am waiting on dinner to simmer. It’s away to knock out two meals in one kitchen session. Takes a few minutes to assemble. Stick them in the fridge for the next morning!

Overnight Oats
– Put 3/4 c. uncooked Old Fashioned oats in ea. jar
– Cover with almond milk (or whole)
– Leave in fridge overnight
– Top with either (or all) of the following: organic maple syrup or raw honey, bananas, cinnamon, almond butter, pecans

My kids choose their own combos and it’s the easiest healthy solution for school mornings.

There are SO many different ways to make Acai bowls, but here’s a really simple, budget friendly recipe. The base ingredients can be thrown into a high speed blender. Makes about 2-3 servings.

Acai Bowls
1 Tbsp Acai powder (Energy boosting + loaded with antioxidants. I got mine at Sprouts)
1-2 frozen bananas
1/2 cup frozen berries
1/2 cup almond milk or coconut milk – more or less for desired thickness
2 spoonfuls of local honey (helps reduce pollen allergies)
Toppings (optional) : 
Coconut chips
Cacao crunch cereal (available at Sprouts)
Chia seeds
Fresh fruit (I always go with whatever’s in season)

 

Tex Mex skillets:
-Whip eggs with seasonings and a dash of milk.
-Fold in crumbled goat cheese.  (optional)
-Pour into ghee greased skillets. I found these mini skillets on amazon.
-Bake at 300 degrees for 12-15 minutes.
– Top with salsa and avocado and serve warm.
*I cook two at a time on convection bake setting and divide them up for the kids.

    We’ve been trying this recipe out and it’s been great! So many ways to mix it up and they are delicious reheated in the oven or toaster oven. We also recently tried overnight oats and it’s one we will go back to again (we just can’t handle it everyday!).
