I’m pregnant also and have a lot of all-day sickness this go around. So difficult to even cook dinner, much harder to find it in me to eat it. So, some days I just succumb to the desire for a smoothie and call it good! 🙂

says:We’ve been making this simple, fresh pasta salad a lot! We love our veggies so we like to overload it with the veggies and chicken so the pasta is not the main concept but just as complimentary as the rest. It was hot here for a week and we all melted and barely ate, but it cooled off and we’re on the coast, so most of the time we catch an ocean breeze where we live…but it’s so hard to eat dinner when in a heatwave.
Cook a pasta (penne, spiral, whatever!) and drain it. Add in several plugs of olive oil, salt and pepper to taste. Sometimes I’ll put a little beef bouillon or a bit of Italian dressing.
Dice up chicken breasts or pull a roasted/rotisserie chicken.
Dice tomatoes (if baby-in half, if roma or vine ripened-diced), avocado, green onion, artichokes, black olives, sharp cheddar cheese, The kids also like colorful peppers and even other creative elements – cucumbers, or lightly grilled squash, zucchini, or carrots…etc.
Mix altogether and serve!
